Description: The originator of Cava wine, old family estate since 1497, Raventos produces one of the best examples of sparkling wine today. They were disgusted by the mediocrity of most Cava producers, therefore they decided to depart from the Cava appellation and create its own appellation, Conca Del Riu Anoia. The pretty pink is from the Monastrell varietal to add even more complexity. This wine develops even more flavors as it opens up. Great even after the effervescence is gone. All grapes come from estate-owned, biodynamically-farmed vineyards in the Anoia River valley. Fermentation in stainless steel tanks. It is aged for at least 18 months before release. “De Nit” means “Of the Night” in Catalan.
